Fragrance is the single most important etiquette point at Japanese omakase counters. Even a trace of perfume, scented hair product, or strongly fragranced laundry detergent can disrupt the entire experience for the chef and fellow guests.
On all dining days: no perfume, no cologne, no scented shampoo or styling products. Use unscented detergent to wash your dining clothes.
⏱ Punctuality
Omakase counters begin simultaneously for all guests. Arriving even a few minutes late disrupts the chef's pacing and the experience of everyone present. Allow extra transfer time — many restaurants are in quiet side streets.
👔 Attire
Smart-casual is appropriate at every venue on this programme. A collared shirt is a respectful choice for men at omakase counters. No jacket or tie required.
🪵 Protect the Counter
Hinoki cypress sushi counters are precious single pieces of wood. Remove rings, bracelets, and watches before sitting. Rest the free hand on the table, not in your lap.
🙏 Tipping
Tipping is not customary in Japan and at high-end restaurants can be awkward. Say "Gochisousama deshita" — the warmest possible expression of gratitude to a Japanese chef.
🍬 No Strong Gum or Mints
Strongly flavoured gum and mints interfere with your own palate and can affect how you experience the sushi. Avoid before and during omakase meals.
